125gm butter
1/2 cup caster sugar
1 egg
1/2 tsp vanilla essence
1 cup SR flour
2 cups Oat Flakes
1/2 cup choc chips
1/4 cup sultanas
1/4 cup dried apricots or cranberries, chopped
Method
- Preheat the oven to 180 degrees celsius
- Cream the butter and sugar until fluffy
- Add the egg and vanilla and beat until smooth
- Add the flour and mix thoroughly
- Add the oat flakes, choc chips and Apricots / cranberries and mix well
- Place tea spoons of the mixture on a lined cookies sheet
- Cook for 15 - 20 minutes or until golden
- Allow to cool on the tray as they will be soft.
