Date and Ginger Loaf

Really nice and yummy

1 cup dates, chopped
1 tbsp preserved ginger, chopped
1 tbsp butter
1/2 cup sugar
1 tsp bi-carb soda
1 cup boiling water
1 1/2 cups self raising flour

  • Preheat oven to 180 degrees celcius
  • Place dates, ginger, butter and sugar in a bowl
  • Sprinkle the bi-carb soda over the top
  • Pour over the boiling water and mix well
  • Leave to soak for ten minutes
  • Add the flour
  • Pour into a greased loaf tin
  • Bake for 45 minutes
