Orange & Almond Cake

My nephew is gluten intolerant so I had to find a birthday cake recipe that was low in gluten for his party. I found this one and it was extremely delicious! Because it has spelt flour it does contain gluten but most people who are simply gluten intolerant rather than being a true celiac can eat small amount of gluten.

225gm unsalted butter, melted
1 1/2 cups icing sugar
3 eggs
1/2 cup orange juice
3/4 cup spelt flour
2 tsp baking powder
1/2 cup almond meal
2 oranges, zested

250gm cream cheese
1/2 cup icing sugar
1tbsp desiccated coconut

  • Preheat oven to 200 degrees
  • Beat melted butter and icing sugar until creamy
  • Add eggs and beat well
  • Add orange juice and beat again until well combined
  • Add the flour, baking powder, almond meal and zest, stir until combined
  • Pour into pan and bake for 10 mins
  • Then reduce the temperature to 170 degrees and bake for a further 30 minutes or until a skewer comes out clean


  • Beat together all ingredient until a thick and creamy icing is formed
  • Spread over cooled cake
